HAPPY MOTHER'S DAY


    I wish a Happy Mother's Day to MOMs all around the world. We should love, honor, and respect our Mothers every day of the year, of course, but this day is a chance to show MOM just how much she means to you. Mother's day is the occasion to pay rich tributes to MOM, who has had a great impact on our lives, a person whose love and care, knows no boundaries, a person who does everything to keep her children happy and joyous.

Chinese Peanut Candy/Fah Sung Thong











    If you've never tried the Chinese candy made with sesame seeds and peanuts, you're really missing out! The flavor of these two ingredients held together by a sweet candy mixture is just out of this world. You can find these candies in any Asian Market but its far more fun to make it for yourself and besides, you know they are fresh. These are great for bake sales, holiday gifts when jarred and delicious snacks for your friends and family. They're easy to make, the microwave makes it easier and only have five ingredients! .



    Ingredients:

    1 cup granulated sugar
    2 tbsp white vinegar
    1 tbsp water
    1/4 cup toasted sesame seeds
    14 oz skinless roasted peanut


    Method:

    Combine sugar, vinegar and water in a microwave-safe casserole dish until well mixed and cook in the microwave on high for 4 minutes, tilt bowl to swirl syrup around the dish and continue to cook one minute at a time without stirring until mixture is golden and reaches 300° F on a candy thermometer.

    While the sugar mixture is caramelizing, line a 6 1/2" x 10" cake pan with foil and generously grease the foil.

    Sprinkle half the sesame seeds and all of the peanuts evenly onto the pan.

    When the sugar mixture has reached the required temperature, carefully pour the sugar mixture over the nuts in the baking pan.

    Smooth the surface by pressing down with another pan of the same size, grease the bottom.
    Sprinkle with the remaining sesame seeds and cool slightly.

    While candy is still warm, remove from pan by lifting the foil.
    Cut into 2" by 1" pieces and then allow to cool completely.

Amazing and Amusing Looks of Costume Institute Gala 2009

    Last Monday, one of the most awaited fashion events of the year took place at New York’s Metropolitan Museum of Art. The Costume Institute Gala 2009, named as “The Model as Muse: Embodying Fashion”, was hosted by Kate Moss and Marc Jacobs.

    Celebrities, models and fashion designers graced the red carpet of the event wearing their best model-looking dresses. I am not surprised to see fashion perfect gowns as well as weird-looking outfits. In every occasion, one can be either fashionable or out-fashioned. Personally every time I stumbled upon blog posts regarding fashion events, I would go directly to the Best-Dressed and the Worst-Dressed links of the site. For this blog, I would classify them as Amazing and Amusing looks.

    Check out the gallery I have prepared for you. I would like to thank the fashion sites who uploaded these photos. Even though we did not attend the party in person, at least we can be amazed and amused with the wild creations and daring outfits of the party’s attendees.

Churros







    I don't really know what a good 'Churro" should be and trusting Foodnetwork, i gave their recipe a try. I think that there were too many eggs in this recipe which made the batter too soft, therefore the pattern was not there when fried. It was like eating 'eclairs' but they were fried and not baked. Too light to be a doughnut although the sugar coating was near.
    Will give the 2 eggs recipe a go the next time around.



    Ingredients:
    Vegetable or olive oil, for frying
    1 cup water
    4 ounces butter
    1/4 teaspoon salt
    1 cup all purpose flour
    3 eggs
    1/4 cup sugar
    1/4 teaspoon ground cinnamon
    Chocolate Dunking Sauce, recipe is at bottom of page


    Method:

    Prepare to fry the churros by heating 1 to 1 1/2 inches oil in a deep pan to 360 degrees F.

    To make churro dough, heat water, butter and salt to rolling boil in 3-quart saucepan; stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from the heat. Beat eggs all at once; continue beating until smooth and then add to saucepan while stirring mixture.

    Spoon mixture into a piping tube with large star tip. Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown, turning once, about 2 minutes on each side. Drain on paper towels.
    Mix the sugar and cinnamon.
    Roll churros in the cinnamon sugar.
    Serve with Chocolate Dunking Sauce.

    Chocolate Dunking Sauce:

    4 ounces dark chocolate, chopped
    2 cups milk,
    1 tablespoons cornstarch
    4 tablespoons sugar

    Place the chocolate and half of the milk in a pan and heat on low.
    When the chocolate has melted, dissolve the cornstarch in the remaining milk and whisk into the chocolate with the sugar.
    Cook on low heat, whisking constantly, until the chocolate is thickened, about 5 minutes. Add extra cornstarch if it does not start to thicken after 5 minutes.
    Remove and whisk smooth.

    Pour and serve in cups for dipping churros

Clementine Poppy Seed Chiffon Cake













    Although i am back but my brain is still on holiday and every function is on vacation mode. Can't continue to point what you want to eat, have to bake for dessert. Have some dried out clementines and made this chiffon which turned out very well. Mind is still slow when it comes to firguring out why it turned out so good.

    Ingredients:
    (A)
    1 3/4 cups Self Rising Flour
    1/8 tsp of salt
    (B)
    1/2 cup of sugar
    3/4 cup Clementine juice(orange juice will do)
    2 tbsp lime juice
    1/4 cup poppy seeds
    zest of 1 orange
    1/4 cup of vegetable oil
    6 egg yolks
    (C)
    3/4 cup of sugar
    6 egg whites
    1 tsp of cream of tartar

    Method:

    Pre-heat oven to 325 degree F.
    Sieve (A) ingredient in a mixing bowl until well combined.
    Mix ingredient (B) following the list, adding the egg yolks last, until well blended and then add in ingredient (A) and mix until smooth. Set it aside.
    Whisk ingredient (C) in mixer on low speed until foamy, then add in the cream of tartar and increase speed to medium high. Continue to whisk until it thickens, then slowly add in the sugar. Whisk until thick and shinny. It should be soft but stiff and thick.
    Fold 1/3 of the egg whites into the egg yolks mixture and mix well.
    When well mixed, pour in the rest of the whisked eggwhites and fold in gently, from the center, to the bottom and fold mixture, turning mixing bowl as you go. Fold until well combined.
    Pour batter into ungreased 10" tube pan and bake for 45 - 50 minutes or use a bamboo skewer to test the cake for doneness, it should come out clean.
    Invert cake, let the center tube rest on a stainless funnel or a steady bottle and let it cool complete in the pan. When cooled, loosen the edge and bottom of the pan by running a flat cake spatula/knife and remove cake.

Mango Mochi






















    Mochi is one of my favorite things to eat. There are endless ways to prepare and flavour mochi - only limited by your imagination (and stomach).
    Mochi is a Japanese rice cake made from glutinous rice. This Japanese glutinous rice delicacy is molded into shape just after pounding the rice. The sticky Mochi are a bit of a challenge to eat. Mochi forms the basis of many Japanese confections such as daifuku, which is mochi stuffed with sweet filling. So, this mochi filled with mangos, should it be daifuku??????? The chinese way to name a dish is simple, just name it from its ingredients - Glutinious Rice Balls With Mangos.

    Ingredients:

    2 cups glutinous rice flour
    1/2 cup rice flour
    1 tbsp santan powder
    2 tbsp oil
    2 cups hot water
    1/2 cup Tang Mango Flavor
    2 drops of mango essence
    2 drops of yellow coloring
    2 ripe mangoes (diced )
    Dessicated coconut for coating
    Method:

    Mix glutinous rice flour, rice flour and santan powder into a big mixing bowl.
    Dissolve Tang Mango Flavor powder with the hot water and add in the oil, mango essence and yellow coloring.
    Pour this into the flour mixture and mix till smooth and well blended.
    Microwave on high for one minute. Stir and continue to microwave, one minute at a time until mixture is translucent and cooked. (Cooking time depends on the wattage of your microwave)
    Leave aside to cool.
    For easy moulding of mochi, use plastic gloves and greased them with some oil.
    Take a 30g piece of dough and flatten it into a round disc, wrap in as much mango cubes as desired. Seal the edges tightly and shape it into round balls.
    Coat the shaped mochi with dessicated coconut.
    Serve chilled.

Happy Cancun Tan

    I am back after a week of leisure, real luxury leisure - lazed in the sunny beach and baked in the sun by the pool. Yes, baked, the family looked as tan as these breads above. That's all the baking and roasting i did for the week - tanned thighs and legs. We booked this trip to Cancun as it was track-off for Renee and despite of the scare in Mexico, we had great fun especially Renee and Alexander.


    Ingredients:
    Same as Tau Sar Bun

    Method:
    Divide dough into rounds or ovals.
    Flatten the round/oval dough and using a round cookie cutter, cut the mouth and place the piece of cut-out dough for the nose - use egg-white to stick it on.
    Using smaller cutters, cut the eyes and use them for ears.
    Let dough proof to double the size, then glaze with egg-wash and decorate the hair and eye-brow with black sesame seeds, red colored sugar for cheeks and M&M for ear-rings. Be creative and have fun as there will be surprises and grins from the results.
